Abacus seeds, or suan pan zi, are Chinese dumplings made from yam or taro. These small, chewy beads are stir-fried with veggies and savory sauces, offering a delightful blend of textures and flavors.

Thai Yam
Tapioca starch
Garlic
Shallots
Minced Pork
Shiitake mushrooms
Dried Shrimp
Dried cuttlefish
Spring Onion
Red Chillies
Vegetable Oil
Sesame Oil
Light Soy Sauce
Corn flour

Recipe

Step 1: Steam shredded yam over high heat until soft (approximately 15 minutes). Mash immediately, and mix in tapioca flour and salt.

Step 2: Knead the yam mixture until it is no longer sticky to the touch, ensuring complete combination with the starch.

Step 3: Dust your working surface with tapioca starch. Roll the dough into a long shape and cut into 2cm-thick slices. Form each slice into a ball with a depression in the center, resembling an abacus seed.

Step 4: Fill a wok with water and bring to a boil. Place the dough pieces in the boiling water, stirring to prevent sticking. Once they float to the surface, transfer them to a basin of tap water using a metal sieve. Once cooled, remove from water and place on a plate. Drizzle with oil.

Step 5: Heat 3 tbsp vegetable oil in a pan. Fry garlic and shallots until fragrant. Add cuttlefish, dried shrimps, black fungus, and mushrooms. Fry for a minute. Add minced pork and fry until nearly opaque. Add the yam abacus seeds and stir-fry for a minute or two.

Step 6: Add the seasoning and mix well. Finally, add sliced chillies and spring onions.

Step 7: Serve the Abacus Seeds Dumplings hot.
