Idrijski žlikrofi are traditional Slovenian dumplings that originate from Idrija. They are made from dough with potato filling and are often served either as a side dish to meat or on their own, in which case they are topped with breadcrumbs. The recipe dates back to the mid 19th century and remains one of the most popular Slovenian dishes

Ingredients
300 g flour
1 egg
60 ml water
60 ml milk
2 tbsp oil
500 g old dense potatoes
50 g bacon (bacon can be replaced by pork cracklings)
Recipe
Step 1: Boil the potatoes until they are soft, then mash them.
Step 2: Fry the bacon until it is crispy, then chop it into small pieces.
Step 3: In a bowl, mix the flour, egg, water, milk, and oil to make the dough.
Step 4: Roll out the dough and cut it into circles.
Step 5: Place a small amount of the potato and bacon mixture onto each circle of dough.
Step 6: Fold the dough over and seal the edges.
Step 7: Boil the dumplings in salted water for about 15 minutes.
Step 8: Serve with breadcrumbs.
