A Jamaican patty is a semicircular pastry that contains various fillings and spices baked inside a flaky shell, often tinted golden yellow with an egg yolk. The most popular filling is beef, but other fillings such as chicken, shrimp, vegetables, cheese, and pork are also used.

For the pastry:
3 cups all-purpose flour
1 tsp turmeric
1 tsp curry powder
1/2 tsp salt
1/2 cup unsalted butter
chilled and cubed
1/2 cup vegetable shortening
chilled and cubed
1/2 cup ice water
For the filling:
1 lb ground beef
1/2 onion
finely chopped
2 cloves garlic
minced
1/2 tsp dried thyme
1/2 tsp paprika
1/2 tsp allspice
1/2 tsp salt
1/2 tsp black pepper
1/2 cup beef broth
1/2 cup breadcrumbs
1 egg
beaten
Recipe
Step 1: In a large bowl, whisk together the flour, turmeric, curry powder, and salt.
Step 2: Add the butter and shortening to the bowl. Use a pastry cutter or your fingers to cut the butter and shortening into the flour mixture until it resembles coarse crumbs.
Step 3: Gradually add the ice water to the bowl, stirring until the dough comes together.
Step 4: Divide the dough into two equal portions and shape each portion into a disk. Wrap the disks in plastic wrap and refrigerate for at least 30 minutes.
Step 5: In a large skillet, cook the ground beef over medium heat until browned.
Step 6: Add the onion, garlic, thyme, paprika, allspice, salt, and black pepper to the skillet. Cook for 2-3 minutes.
Step 7: Add the beef broth to the skillet and bring the mixture to a simmer. Cook for 10-15 minutes, or until most of the liquid has evaporated.
Step 8: Remove the skillet from the heat and stir in the breadcrumbs. Allow the mixture to cool.
Step 9: Preheat the oven to 375°F (190°C).
Step 10: On a lightly floured surface, roll out each disk of dough to a thickness of about 1/8 inch.
Step 11: Use a 5-inch round cookie cutter to cut out circles from the dough.
Step 12: Place about 2 tablespoons of the beef filling onto one half of each circle of dough.
Step 13: Brush the edges of the dough with the beaten egg and fold the other half of the dough over the filling to create a semicircle. Press the edges of the dough together to seal.
Step 14: Place the patties onto a baking sheet lined with parchment paper.
Step 15: Brush the tops of the patties with the beaten egg.
Step 16: Bake the patties for 25-30 minutes, or until golden brown.
