Ingredients
1 cup peanuts
toasted
1/3 cup sesame seeds
toasted
2 1/2 tbsp granulated sugar
1/2 cup shredded coconut
1/4 cup glutinous rice flour
1/4 cup water
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp white vinegar
1/4 cup all-purpose flour
Vegetable oil for frying
Recipe
Step 1: In a food processor, pulse the peanuts, sesame seeds, and sugar until finely ground. Transfer the mixture to a bowl and stir in the shredded coconut.
Step 2: In a separate bowl, whisk together the glutinous rice flour, water, salt, baking powder, baking soda, and vinegar until smooth.
Step 3: Add the all-purpose flour to the rice flour mixture and stir until a dough forms.
Step 4: Divide the dough into 12 equal pieces and roll each piece into a ball.
Step 5: Flatten each ball into a disk and place a tablespoon of the peanut mixture in the center.
Step 6: Fold the edges of the dough up and around the filling to form a pouch, pinching the edges together to seal.
Step 7: Heat 2 inches of vegetable oil in a deep pot to 350°F.
Step 8: Fry the dumplings in batches until golden brown and crispy, about 3-4 minutes.
Step 9: Drain on paper towels and serve warm.
