Ingredients

4 Tablespoons Butter
4 Celery Stocks
chopped
4 Carrots
Chopped
¼ Cups flour
4 Medium Potatoes
Chopped
8 Cups Chicken Stock
Salt to taste
1 Cup Heavy Whipping Cream

FOR DUMPLINGS:
2 cups flour
2 eggs
½ cup milk
1 Teaspoon salt

Recipe

Step 1: In a large pot, melt butter over low heat.

Step 2: Once melted, add carrots and celery, and cook on low for 5 minutes.

Step 3: Stir in ¼ cup of flour.

Step 4: Add 1 cup of Chicken Stock to the soup and mix to incorporate the flour. Then, add the remaining stock.

Step 5: Add potatoes and turn the heat to medium-high. Cook until potatoes are tender (about 30-40 minutes).

Step 6: While potatoes are cooking, prepare the dumplings. Mix all dumpling ingredients in a bowl, combining well. Divide the mixture into two pieces for easier handling.

Step 7: Roll each piece into a rope approximately 1 inch in diameter. If needed, sprinkle with flour to make it easier to work with.

Step 8: Cut into 1-inch dumpling pieces and set aside.

Step 9: Add any needed salt to the soup.

Step 10: Once potatoes are tender, add dumplings to the soup.

Step 11: Cook for 5 minutes.

Step 12: Remove from heat, add cream, and stir.

Step 13: Serve.
